Why Cleaning the Kitchen Hood Filters Alone Is Not Enough
Kitchen hood filters are one of the most visible parts of a commercial kitchen exhaust system. Because they are easy to remove and clean, it is common for kitchen staff to clean them regularly.
But cleaning the hood filters is not the same as cleaning the complete kitchen exhaust system.
Where Does the Cooking Exhaust Go?
A typical kitchen exhaust route can be understood simply as:
Cooking Area → Kitchen Hood → Hood Filters → Exhaust Duct → Exhaust Fan → Discharge
The hood filters capture part of the grease produced during cooking, but they cannot capture everything.
Fine grease particles, oil vapour and other cooking residues can continue through the system and gradually accumulate inside the hood, ductwork, exhaust fan and discharge areas.
Clean Filters Do Not Mean Clean Ducts
A set of freshly cleaned stainless steel filters may look excellent from inside the kitchen, while grease may still be present further inside the exhaust system.
This is particularly important where ducts are long, have bends, pass through concealed areas or connect to exhaust fans located away from the kitchen.
These areas cannot normally be assessed simply by looking at the front of the hood.
Why the Exhaust Fan Matters
The exhaust fan keeps air moving through the system. When grease builds up on accessible fan components and surrounding areas, the system may become more difficult to maintain and its performance may be affected.
Protecting the fan is one reason why regular full-system maintenance is more useful than concentrating only on the filters.
Think of the Exhaust System as One Connected Route
The hood, filters, ducts, fan and discharge route work together. Cleaning only the easiest visible component does not address grease that has travelled further through the system.
For effective maintenance, the condition of the complete kitchen exhaust route should be considered rather than the hood filters alone.
为什么只清洗 Kitchen Hood Filters 还不够?
Kitchen Hood Filters 是商业厨房排烟系统中最容易看到的部件之一。因为容易拆下来,所以厨房工作人员通常会比较经常清洗 Filters。
但是,清洗 Hood Filters 并不等于已经清洗了整个 Kitchen Exhaust System。
一个典型的厨房排烟路线可以简单理解为:
Cooking Area → Kitchen Hood → Hood Filters → Exhaust Duct → Exhaust Fan → Discharge
Hood Filters 可以拦截烹饪过程中产生的一部分油脂,但不可能把所有油脂完全拦住。
细小的油脂颗粒、油气和其他烹饪残留物仍然可能继续进入排烟系统,并逐渐累积在 Hood 内部、Exhaust Duct、Exhaust Fan 和排风出口等位置。
所以,即使厨房里看到的 Stainless Steel Filters 刚刚清洗得很干净,也不能代表后面的 Duct 和 Fan 同样干净。
尤其是较长、有转弯、经过隐藏区域,或者连接到远离厨房位置 Exhaust Fan 的 Duct,仅仅从 Hood 前面是无法判断内部实际情况的。
Exhaust Fan 负责维持整个系统的空气流动,也是比较昂贵的重要设备。定期维护整个排烟系统,比只集中清洗 Filters 更有利于保持排烟效率及保护设备。
Kitchen Hood、Filters、Duct、Exhaust Fan 和 Discharge 是一条相互连接的排烟路线。真正的维护应该考虑整个系统,而不是只看最容易清洗的 Hood Filters。
